Production Area
Estate-owned vineyards located in the hilly area north of the town of Bibbona, on mixed clay soils rich in pebbles, well exposed to sunlight at an altitude of 60–70 meters above sea level.
Grape Variety
Sangiovese, Cabernet Franc.
Production Technique
The grapes, hand-harvested during the first week of October, are immediately destemmed and crushed. Alcoholic fermentation lasts about 8 days, followed by skin maceration for around 10 days. The wine is aged for 8 months: 60% in second-use French oak barriques and 40% in stainless steel tanks, followed by 6 months of bottle ageing.
Organoleptic Characteristics
Ruby red colour. Fruity bouquet with notes of red berries and spices. Full-bodied, smooth and enveloping.
Food Pairings
Particularly suitable with traditional Tuscan dishes, especially roasted meats, game and cheeses. Alcohol content 12.5%–13.5%. Serve at 16–18°C.
